Spicy & Sweet Thai Rice



2 cups of brown rice precooked  
½ cup of wild rice (optional) precooked 
½ teaspoon apple cider vinegar 
½  cup cashews  
2-3 tbsp honey 
½ teaspoon cayenne pepper 
½ -1 tbsp chilli powder 
½ -1 cup soy sauce or braggs aminos 
½ cup sliced onions 
½ cup red & or green bell peppers (optional) 
4 cups raw kale 

First caramelize your onions in olive oil for approx. 7 min on med heat. Then add your bell peppers & let them cook for another 3 mins. Add soy sauce, Honey,  then chili powder, and cayenne. Add the apple cider vinegar. Now stir in kale and let it cook for 2 mins on med high heat. Then stir in precooked wild & brown rice and cashews. Now serve!

Vegan Pumpkin Pancakes


Ingredients
  • 2 1/2 cups whole wheat flour
  • 2 1/2 cups water
  • 1/2 cup soy milk
  • 2 tbsp baking powder
  • 1 tsp salt
  • 1/2 cup mashed, cooked pumpkin (or canned Pumpkin Puree)
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 tsp apple cider vinegar (or white if necessary) 
Directions
Combine soymilk with the tsp vinegar in a separate bowl. Give it 5 minutes to curdle (this is like using buttermilk). Stir together pumpkin, spices, water and soymilk in mixing bowl. Add in remaining ingredients and stir JUST UNTIL MOIST, NO LONGER. Let sit 5 minutes to rise and lightly stir again. Let rest 5 more minutes and cook them up. Makes twenty 4" pancakes.  Number of Servings: 20

Healthful Hints: Cleansing Day

In these very stressful times I know it can be hard to find the time to take a quick relaxation break. When and if you so happen to find a day where you can unwind and relax a Cleansing Day may be in order. The effects of stress can be increased when the body is filled with toxins that can come from eating bad foods and breathing unclean air. So it is good to take a day that is dedicated toward cleansing away all impurities including that of the mind body and spirit. Some activities that can be done during that day are....

  • Fasting : Fasting from junk food and any other foods that can be toxic to the body will give your body a rest as well as increase the effectiveness of the cleansing activities that follow.
  • Detoxing: Detoxing is the process through which your body purges it self from the build up of toxins. Detoxing tonics such as raw organic Apple cider vinegar (ACV), Lemon and cayenne pepper water, and any detox teas can help to aid your body with its own natural detoxification processes.
  • Yoga and Meditation: Yoga and meditation will aid in clearing the emotional, mental, and spiritual bodies of built up toxic thoughts and emotions. Cleansing your mind of impurities is key to overall health and holistic healing.
  • Pampering: Pampering yourself is a great way to promote self love and healing allow yourself to rest. Do you hair or give yourself a all natural facial! Activities like this will help you to unwind and promote the spirit and energy of healing around you.
  • Healing baths: This would fall under pampering but it is highly important that you understand the mental, spiritual, and physical significance of bathing. Obviously it helps to cleanse away physical dirt build up in and on the skin which is the biggest detoxifying organ in the body. But bathing with things like bath salts, essential oils, and herbal all natural soaps helps to clear negative energy and brighten the aura.
  • Affirmations: Affirmations will help you to reprogram any negative programing you might have received through out your life. It will help you to remain positive and upbeat and manifest your greatest intentions.
Eating healthy through out the day as well as following these tips will help you have a cleansing and restful day. Be sure to make an effort to love and heal yourself and remember HEALTH IS WEALTH ^_^

Vegan Oatmeal Rasin Cookies

1st mix the wet ingredients
1 cup of sugar
1/2 cup of apple sauce
1/3 cup molasses
dash of vanilla extract
then the dry...
2 cups of flour
1 teaspoon of cinnamon
1/2 teaspoon of salt
2 cups of oatmeal
1 cup of raisins
makes about 24 cookies bake on 350 for about 5-7 mins

my moms basic homemade vinaigrette


Ingredients
  • apple cider vinegar (preferably brags raw)
  • extra virgin olive oil
  • italian seasonings (marjoram, thyme, rosemary, savory, sage, oregano and basil)
  • parsley
  • mrs dash garlic and herb
  • adobo seasoning (no msg)
  • seasalt

You want to start out with a mixture that is 3 parts vinegar to 2 parts evo. That is the most important step in my eyes from here i like to add a dash of each seasoning to taste and stir vigorously with a fork or whisk until the mixture is emulsified. Taste it to make sure the dressing is seasoned to your liking and enjoy!

The best thing about this vinaigrette is it is easy to make and the ingredients are easy to find. Plus it has no preservatives and you can control the amount of sodium you put into the recipe. Unlike the store bought already made alternatives that often contain unnecessary preservatives as well as hidden sugar intake. All these harmful ingredients can turn your well intended healthy meal into a calorie filled condiment covered calorie fest that can do your body more harm than good. So take an extra 5 mins out of your day to create an easy healthy alternative that can do your body well!

Cape Verdean Style Brown Rice

Ingredients

  • 2-3 cups of long grain brown rice (that has been soaked for atleast a hr)
  • 1 medium chopped onion
  • 2 cloves garlic
  • 1 medium chopped tomato
  • 1 chopped green bell pepper
  • 3small or 2 large bay leaves
  • adobo (goya) to taste
  • sea-salt to taste
  • badia Jamaican style curry powder to taste (optional)
  • mrs dash original to taste
  • olive oil

Take a pot place it over a medium high heat. Put olive oil in the pan for about two mins or until the pan heats up then add garlic let it cook for 30-45 sec or until begins to brown (not burn.) Now add onions and let them cook until they BEGIN to caramelize. Then add a couple generous shakes of adobo, mrs dash, and curry powder, but a small sprinkle of seasalt. Then add green bell peppers stir then add the tomatoes and bay leaves. Finally add the long grain brown rice, that has been soaking for atleast a hr but the longer the better, and pour water over the rice until it covers slightly over the top of the rice. Bring the water to a boil. After five minutes of boiling turn down the heat to medium and stir. Let the rice boil for about 10-15 mins or until water is almost completely boiled out but is still a bit wet and uncooked. Add a bit more adobo and sea salt. Turn the flame to low and let it steam out until the rice is almost fully cooked. Turn off the flame and let it finish steaming through.

Curry cabbage and green bean stew (asian style)

Ingredients

  • 1 head of chopped Cabbage
  • Asian style curry powder
  • 3 table spoons soy sauce
  • a medium sized carrot
  • 1 medium or large chopped onion
  • 2-3 cloves of garlic
  • 1 chopped green bell pepper
  • 3 cups of chopped and washed green beans
  • 1 once of minced ginger root
  • one cooked pot of brown rice (you can use my capeverdean style recipe if you like)
  • seasalt to taste
  • bragg 24 herbal blend to taste
  • mrs dash garlic spice blend to taste
  • raw sunflower seeds (optional)

Heat a pot on medium high heat. Add olive oil and let it heat up for 1-2 minutes or until hot. Add garlic and let it cook for about 30 secs or until it starts to brown. Add onions and let them cook for about another 30 secs or until they begin to caramelize. Add 1/3 ounce of the ginger. Then add the green bell pepper that you chopped and stir in with the other veggies. Begin to add the seasonings seasing a couple shakes each of the seasalt, bragg, mrs dash and curry powder. Let the veggies simmer for about another 30 secs then add cabbage into the mixture and stir. let it wilt down for 30 secs then add water and bring it to a boil. Let it boil for about 10 mins or until the cabbage is half way cooked (i like mines still a bit crisp) Add the soy sauce and the rest of the ginger. Then add green beans and let it cook through for another 5-10 mins (depending on how well done you like your veggies.) Add the stew on top of a bed of brown rice and sprinkle raw sun flower seeds and a bit of shredded carrot for garnish.

Healthful Hints: Acne

Do you have acne? stop with all the Noxzema, proactive ect. all you need are two things WATER and TEA TREE OIL. Take a 1-2 drops of tea tree oil put it on a damp face cloth and wash your face with it. You can always apply a same amount to concentrated breakouts. Now for the water drink it! acne is a sign your body is trying to cleanse itself of toxins water will help you not only hydrate but get rid of toxins in your body!

Healthful Hints: PMS

Okay ladies i know how it is when it gets to be that time of the month here are four helpful remedies to the discomfort that can be caused by PMS

1) raspberry leaf tea: cramps and heavy flow

2) cucumber celery and ginger juice: cramps and bloating

3) apple cider vingar: constipation (triggers cramps) and fatigue.

4) primrose oil: moodswings, bloating, cramps, and hormonal acne. There you go all these things are natural and can help you get over when aunt flow is in town -_^

Chewy Vegan Chocolate Chip Cookies

1 cup unbleached or whole wheat all purpose flour

1 tea spoon of baking soda

1/2 teaspoon baking powder

dash of fine salt

3/4 cup of lightly packed brown sugar or organic cane sugar

3 table spoons of canola oil or 1/2 cup earth balance margarine

2 tablespoons of soy, almond, hemph, or coconut milk (any nondairy will do)

1 tablespoon of pure vanilla extract

3/4 cup nondairy sweet chocolate chip

will make 18-19 cookies mix wet then dry ingredients to evenly distribute ingredients

Preheat the oven to 350°F bake for 12 mins ive learned that the bigger u make u cookies the better the taste... and you MUST allow them to cook because this recipe does not have eggs its needs to cool to bind... put them in the freezer for 5-10mins to accelerate this process

Basic Veggie Stir Fry

Ingredients

  • 2 medium bushels of broccoli chopped and washed
  • 1 cup of spinach
  • 1 cup of chopped green bell peppers
  • 1 cup of chopped onions
  • 3 medium cloves of garlic
  • 1/2 cup of sliced carrots
  • 1/2 tsp thyme
  • 1/2 tsp seasalt
  • 2 tsp adobo goya (optional)
  • 1 1/2 tsp mrs dash seasoning
  • 1 1/2 -2 tbsp bragg amino acids
  • 2 tbsp or enough cover the pan over about 1/2cm olive oil
  • 1/2 cup of water

First heat the pan on medium heat for 3 mins or until the oil is heated. First add your garlic and let saute for about 40-60 secs then add your onions. Let your onions saute for about 20-30 secs or until they BEGIN to caramelize. Then add your green bell peppers and mix them in with your seasonings. Add them in the following order seasalt stir, adobo stir, mrs dash and thyme then stir. Then add your carrots and stir them in well and add 1 of the 2 tbsp of braggs amino. After add your broccoli cover and let it cook until for about 5mins or until they turn a bright green. Its important to note that you DONT over cook the veggies especially the broccoli. Doing so can leave you with nutrient depleted veggies which defeats the purpose of eating them in the first place. Now add your cup of baby spinach leaves. Let them cook for about 30sec on low heat and mix in the remainder of your aminos with 1/2 cup of water which will create a flavorful sauce. Add this over some delicious brown rice and ENJOY!

Healthful Hints: Juice Recipes

Juicing can be a very cleansing and healthy experience for the body. It allows your body the chance to absorb alot of nutrients and give your digestive system a gentle rest. Juicing can help you add a healthy verity of fruits and veggies into your diet, and juice fasting can help to alleviate and prevent disease. Here are a few of my favorite juice recipes.

Chlorophyll Cocktail
(helps hemorrhoids and tumors)
